The air fryer and deep fryer versions has different recipe ingredients so do not attempt this recipe to deep fry. The deep fried version will be posted soon so do check it HERE.
What is Pudina Sev?
Sev is basically a crispy snack made using gluten free flours ie chickpea / Gram flour and rice flour combo and can be made plain or mixed with mint, potato, coriander leaves, red chili powder, pepper, lemon juice so and so. This sev is flavored with mint, lemon juice and green chilis and called as Pudina (Translate as Mint) Sev or Mint Sev.
Air Fryer Vs Deep Fried
There is a small change in the recipe between the air fryer and deep fried version. So stick with this recipe to get perfect crispy air fryer pudina sev by watching the attached video tutorial at the end of this post. Do not attempt to deep fry this recipe since it has baking soda it may splutter while pressing over hot oil. Do check the deep fried version HERE (link later).
Why Pudina Sev in Air Fryer ?
No need to stand in the kitchen for a long time by paying full attention and fry in hot oil instead squeeze the dough and air Fryer does the magic. And no greasy sev (you know the difference between both versions) just flip sev in the middle of the process and lightly brush with oil..This gluten free and vegan snack can be eaten as it is or added to mixture/namkeen and do make it a great evening snack for your family. I also added a small batch of Air Fried Karasev with dal namkeen (a complete 100% air fried recipe) which I am going to post it either before Diwali or after that. Pudina Sev Recipe Star Ingredients
- Besan / Gram Flour – Gluten free chana dal flour which is the main ingredient for this recipe
- Rice Flour – Gluten free flour used to get crispy sev
- Mint – Main ingredient to flavor sev
- Lemon Juice – Enhances the taste of pudina sev
- Baking Soda – Main Ingredient in air fryer method to get cripy sev
- Hot Oil – Main ingredient to get crispy sev
- Green Chili – To enhance the pudina sev taste
Pudina Sev Recipe Ingredients
Yields : 6-7 Batches of Sev
Gram Flour (Besan) – 1.5 Cups
Instant Rice Flour – 1/2 Cup
Mint – 1 Cup (loosely packed)
Coriander Leaves – 1/4 Cup (loosely packed)
Lemon or Lime Juice – 2tsp
Baking Soda – 1/16tsp (A Pinch)
Green Chilli – As Needed
Salt – As Needed
Oil – 2 Tbsp plus for brushing on top
Water – 6 Tbsp
Chat Masala Powder – 1tsp (Optional)
How to make Dough For Pudina Sev
- Measure gram flour needed for the recipe and sieve it before start making sev.
- Grind mint leaves, coriander leaves , green chili along with the given water measurement (Pic 1).
- Filter and keep the mint mixture aside (Pic 2).
- In a mixing bowl add sifted gram flour and rice flour (Pic 3).
- Also add baking soda and salt to the flour mixture.
- Now heat oil and pour over the dry flour mixture (Pic 4).
- Once you add oil to the flour mixture, you can see bubbles ie froths.
- Stir with ladle or carefully with hand.
- Few seconds later rub oil with flour using hand (refer video tutorial).
- Once done the mixture looks crumbly.
- Now add lemon juice followed by mint mixture in batches (Pic 5).
- Do knead to a stiff dough (Pic 6).
- If the dough is super moist adjust with gram flour and rice flour of right proportion.
- Too moist dough needs long time to air fry or gives soggy sev.
- Do make right consistency stiff dough, yet pliable and crack free like shown (Pic 6).
How to Air Fry Pudina Sev
- Grease sev press with oil all over the handle and to the inner cylindarical part for smooth handling.
- Chose the shape and tighten the bottom of the sev press (Pic 1).
- Insert pudina sev dough (Pic 2) in to the press and seal it.
- Choose either Air Fry or Roast option in the Air fryer.
- Set time for 6 minutes and temperature to 325 F (Pic 3).
- Air fryer preheats in less than 2 minutes, so be ready with the dough.
- Once it indicates to add food do pull the basket out.
- Immediately squeeze the dough in circular motion like shown in Picture 4.
- Spread a single non overlapping disc for better texture.
- In the middle of air frying, when its 3 or 2 minutes left to finish, it asks to turn the food.
- Do flip gently and apply light oil (refer video tutorial).
- Insert the basket and let it continue air fry for the rest of the minutes.
- Once done (Pic 5) do check whether its crispy or not if not do fry 1 or 2 minutes more.
- For me it was perfect after 6 minutes of air frying.
- You can make square sev by utilizing the entire air fryer basket space.
- Do cool the fried sev over cooler rack (Pic 6), once done store in an air tight container.
- You can either store as it is or break into small pieces and store.
