This is one among the snack my Mom usually prepares for Diwali. Today
my kids are having cold due to breezy weather, so I thought of making some vada
or pakoda with peanuts for them. I make
this pakora frequently as evening snack since my DH also love peanuts much. But
today I made it to have for lunch with Dhal/Paruppu rasam (with more pepper) and rice, even this
made me to click the picture in sunlight after a longtime J…Ingredients
Instant Rice Flour – 1 Cup
Gram/Besan Flour – 3/4 Cup
Pottukadalai Powder (Split roasted gram/dhalia) – 3 Tbsp
Red Chilli Powder – 2tsp
Raw or Roasted Peanuts – 1/2 Cup
Butter/Veg Shortening – 2 Tbsp
Salt and Water – As Required
Oil – to deep fry
Hing/Asofetida or Cumin powder – A generous pinch (Optional)
Method

If using raw peanuts, just dry roast in medium flame for 3 mins, not more than that.

Let it cool, meanwhile prepare the batter.

Powder the split roasted gram.

Mix all the dry ingredients then add butter and make crumbled mixture.

Now sprinkle water to form a soft stiff dough (as shown)

Finally add roasted peanuts and mix gently as shown.

If not stick to the dough just sprinkle or wet ur hand and mix gently.

Some of the peanut skins may peel or split, that’s normal.

Heat oil for deep fry and in low flame sprinkle the mixture as much u can.

Don’t add in lumps, if doing so tends to uncooked inner dough, so try to separate well.

While sprinkling some peanuts may separate, nothing to worry…

Increase the flame to medium n fry till golden brown.

While taking out from the pan, increase the flame to high and take it out.
-
Thats it very crispy pakodas are ready in less than 30mins.
