Sieve gram flour before start making karasev.

In a mixing bowl add sifted gram flour and rice flour.

Add a portion of rice flour and peppercorns to mixie/food processor and grind pepper to coarse.

But for kids sake I always grind it to slight fine powder, also you can replace it with store bought pepper powder.

Add ground pepper with rice flour in to the mixing bowl (Pic 1).

Also add baking soda (Pic 2) and salt to the dry flour mixture.

Now heat oil and pour over the dry flour mixture.

Once you add oil to the flour mixture (Pic 3), it foams.

Stir with ladle and after few seconds rub oil with flour using hand (Pic 4).

Once done the mixture looks crumbly (Pic 5).

Now add water (Pic 5) in batches and mix until it turn into a stiff dough (Pic 6).

If its super moist adjust with gram flour and rice flour of right proportion.

Too moist dough needs long time to air fry or gives soggy karasev.

So make it the right consistency stiff dough like shown (Pic 6).

Grease murukku press with oil for smooth handling.

I have chosen a shape shown in Picture 7.

Insert the karasev dough in to the press (Pic 8).
