Cauliflower Ghee Rice Recipe

Ingredients
  • Cooked Rice - 1 Cup (i use sona masoori you can use basmati or boiled rice too)
  • Shredded Cauliflower - 1/2 Cup
  • Bay or Brinji Leaves - 2 Numbers
  • Ginger and Garlic Paste - 1.5 tsp
  • Cumin or Mustard Seeds - 1/2 tsp
  • Pepper Powder - 1/2 tsp
  • Green Chili - 2 Numbers
  • Green Onion - 1/2 Bunch Optional
  • Turmeric Powder - 1/2tsp Optional
  • Ghee - 2 Tbsp
Instructions
  1. You can use either freshly cooked rice or leftover rice to make this one pot meal.

  2. Keep all the ingredients ready.

  3. Heat ghee in a pan.

  4. Add bay leaves, cumin seeds, when the seeds starts splutter add ginger garlic paste.

  5. Saute till nice aroma attains from the ginger garlic paste.

  6. Now add green chilis and saute till they wilt.

  7. Finally add shredded cauliflower , pepper powder and salt, cook covered for 5 minutes in medium flame.

  8. You can sprinkle little water but it is not necessary cauliflower cook in its own moisture.

  9. Once cauliflower cooked, add the cooked rice and optional green onion.

  10. Just mix all together and at last adjust salt.
