Blueberry Popsicles is a healthy indulgence using fresh berries, again I am here with just three ingredient recipe today. I made this popsicle for last summer and due to laptop crash I couldn’t recover stepwise pictures. But you can check my blueberry frozen yogurt from where I followed the technique for pureeing the berries. Regarding molds I prefer this plastic cups they are very handy single serve cups and are easy to carry for parties/ potlucks as well. But you can use any mold as you prefer and you can check the video tutorial with this cups in my Mango Kulfi post.
Blueberry Popsicles Recipe
Ingredients for the Blueberry Compote
Fresh Blueberries – 1.25 Cups
Water – 3 Tbsp
Milk – 1/2 Cup (use just to grind the cooked blueberries)
Regular Sugar – 1 Cup
Lemon Juice – 2 tsp
- Combine blueberries, water, sugar and lemon juice in a small saucepan.
- You can immediately cook or rest at least 2 hours in refrigerator (stir on and off) and cook later.
- Cook over a medium heat for about 15 minutes.
- This is the blueberry compote if the recipe calls for.
- But here for the popsicle they are grinded to fine puree.
- Keep stirring often and if you have potato masher you can mash while cooking so it mashes soon.
- Once cooled completely, pulse in the food processor with 1/2 cup milk and strain the seeds.

Thick Blueberry Puree – Prepared above
Heavy cream – 1 and 1/2 Cups
Vanilla Extract – 1 tsp
Salt – A Pinch
How to make Blueberry Popsicle
- Combine Heavy cream , vanilla extract,Β salt and blueberry puree all together.
- To make popsicle like shown in picture below with blueberry swirls here and there, you have to keep the first blueberry extract separately.
- Add cream, second time extracted milk mixed puree, vanilla extract and salt.
- Give a good stir so all has even color.
- Finally add the preserved thick first extracted puree and with fork gently stir clock wise.
- Adjust sugar by adding some powdered sugar here right now.
- That’s it, pour the mixture in the popsicle molds.
- The plastic cups shown here are handy for birthday or summer pool parties.
- Once poured in it refrigerate for 2 hours first.
- Then insert the popsicle stick, and wrap them all covered.
- Again freeze it for 2-3 hours or overnight.
- Before serving show the cup over running water to unmold.
- That’s it enjoy π
