Beetroot raita is my MIL’s recipe. Whenever she is with us she prepares atleast once in a week for lunch with Uppu paruppu and Potato Podimas. Nowadays i am addicted to this recipe.
Ingredients
Grated Beetroot – 3/4th Cup
Yogurt – 1/2 Cup or More
Water – As Needed
Water – As Needed
Salt – As Required
To Grind
Grated Coconut – 1/4 Cup
Cumin seeds – 1tsp
Ginger – Small piece
Green chili – 1-2 Numbers
Method
- In a pan just toss the grated beetroot by sprinkling little water, till it cooks well.
- Grind the raw ingredients to a fine paste.
- In a bowl add beaten yogurt, cooked beetroot , coconut paste, if needed some water and salt.
- In a hot pan with a tsp of oil temper mustard and add few chopped onions(optional), curry leaves, garnish it over the kichadi/raita.
- Serve with Rice.
