Most of my kids day out is with my hubby. Once in a blue moon 🙂 I take them out to the nearest park. I got few park friends and few months back one of them asked for chicken nuggets (Sorry for the delay :). I am giving both the baked and shallow fried version with homemade avocado dip. Please choose your choice. To my perspective both are equally good. I referred few blogs and adapted it to our taste.
Baked Version
Boneless Chicken – 1/2 Kg
Olive Oil – 1 tsp
Egg – 1 Number
Pepper – 1 tsp
Basil and Oregano (Herbs) – 1 tsp each (Optional)
Red Chili Powder – 1/2 tsp
Bread Crumbs, Salt – As Required
Parmesan Cheese Powder – 1/4 Cup (I used Shredded Mozzarella Cheese)
Method
- Clean and cut the chicken in to thin slices
- Marinate all the ingredients for 30 minutes.
- Bake it in 400°F for 10 minutes or till cheese melts.

Avocado Dip
Avocado – 1 number
Onion – 1/2 Number
Tomato – 1/2 Number
Green and Red Bell Pepper – 1/2 each
Curd – 1/4 cup
Tomato Ketchup – 1 tsp
Salt – As Required
Method
Take the plush part of the avocado and grind all the above ingredients (raw) to make the dip. The Dip is best for Idli, Chips & French Fries. The Last picture among the four is for baking chicken nuggets.
Shallow Fry
To Marinate
Boneless Chicken – 1/2 Kg
Pepper – 1 tsp
Soy Sauce – 1 Tbsp
Corn Meal (Coarsely powdered) – 2 Tbsp or As required
Basil and Oregano (Herbs) – 1tsp each (Optional)
Red Chilli Powder – 1tsp
Garam Masala – 1tsp
Lemon Juice – Few Drops
Turmeric Powder – 1/4tsp
Salt & Oil – As Required
Outer Coating
Powdered Chips – 2 Tbsp (I used the salted chips we get in any store)
Homemade Bread Crumbs (White + Whole Grain) – 1 + 2 Tbsp
Pepper Powder – 1/2tsp
Method
- Cut the chicken in to thin slices
- Marinate the ingredients given under “To Marinate” for 30mins.
- Press well with the bread crumb mixture on both sides.
- Heat Oil, fry the nuggets till golden brown.
Note:
As I have not used any egg coating for shallow fry, I marinated with little moisture to absorb the bread crumbs. This is really a less oil absorbing fry (whenever I make deep fries I measure before and after used, that’s how I say it is less absorbent). Can get the thick outer covering and authentic look by ground the chicken, mix the masalas/above ingredients, dip it in the egg coating and then spread in bread crumbs covering before fry.
