In December I prepared 3 Oreo Ice cream Cake s for Holiday parties and one I kept it for us. Its such an amazing chilled cake with the layers of brownie topped with Hot Chocolate Syrup and then Oreo Ice Cream, frosted with Oreo Whipped Cream and finally decorated with chocolate ganache.
This Ice Cream doesn’t need a special spring foam pan, your regular Sieve / Jalladai in Tamil gives perfect cake. Even in that busy schedule I managed to record the entire cake making and shared the recipe with video tutorial

I have made several times so the pictures are mix of it, and the below one was done completely by my 9 year old daughter for her dad on Father’s day recently with few helps from me.
Resting Time 6- 8 Hours , Yields 8 inch two layer Oreo Ice cream Brownie Cake
Serves 12- 14 slices
Variations
- Instead of Oreo in Whipped Cream you can use Coffee or Chocolate Flavor.
- You can replace Cream Cheese mentioned here with Whipped Cream for the Ice Cream filling.
- You can use powdered Oreo or any biscuit crumbs as layer for no bake option. Do refer HERE.
- Icing the cake with Oreo whipped cream is purely optional.
Brownie Preparation
Ingredients
All Purpose Flour/ Wheat Flour – 1 Cup
Baking Powder – 1/4 + 1/8 tsp
Canola Oil – 3/4 Cup
Sugar – 1.5 Cups (I use mix of Organic White Sugar / Turbinado and Brown Sugar, Reduce to 1 Cup for mild sweetness)
Salt – 1/4 tsp
Eggs – 3 Large
Cocoa Powder – 1/3 Cup
Vanilla Extract – 1 Tbsp
Method
- Mix all the dry ingredients (flour, baking powder, cocoa powder and salt) in a mixing bowl and keep aside.
- In another mixing bowl add Oil and Sugar mix till sugar dissolves.
- Add one egg at a time, vanilla extract and beat till mixture foams.
- Add the dry ingredients mixture in batches to the egg mixture.
- Beat until the cake batter turns shiny and glossy.
- Divide in two 8 inch greased / parchment paper placed cake pans
- Bake at 350 F for 20 -22 minutes or tooth pick inserted comes out clean.
- Allow to cool on a wire rack for 30 minutes and do assemble it as instructed below.
Ice Cream Preparation
Ingredients
Oreo – 16 Numbers
Heavy Cream / Whipping Cream – 8oz
Cream Cheese – 8oz
Powdered Sugar / Icing Sugar – 1/2 Cup
Method
- Beat the Cream Cheese with sugar until it turns soft and smooth.
- Add heavy cream and continue whipping till the cream reaches soft peaks.
- Like shown in video add crushed Oreo’s and mix with spatula.
- Refrigerate till use.
Oreo Ice Cream Cake Video Tutorial
Oreo Whipped Cream Icing
Ingredients
Heavy Cream / Whipping Cream – 1 and 1/4 Cup
Icing Sugar – 1/2 Cup
Coarse Oreo – 6-8 numbers
Method
- In a chilled bowl whip the heavy cream to soft peaks.
- Add Icing sugar and continue till it reaches stiff peaks.
- Add the coarsely powdered Oreo and mix with spatula.
- You can alter the Icing Flavor to Coffee or Chocolate.
- Refrigerate till use.
Other Ingredients
Chocolate Sauce / Syrup – 1/2 Cup (I use Hershey brand)
Chocolate Chips or Candy Wafers for decoration – 1 Cup (I use Ghirardelli brand)
Heavy Cream – 1/2 Cup
Few Oreo – To decorate the cake
How to Assemble Oreo Ice Cream Cake
- Now the brownie, Ice Cream all ready to assemble.
- My sieve is little less than 8 inch so trimmed the 8 inch brownie base as shown in the video.
- Whatever rim or spring foam you use make sure the brownies fit in it.
- Increase the height of the sieve as shown for that grease the inner sieve with butter and then stick the parchment paper.
- Place cake rim or the sieve rim without plate or spring foam pan over cake board (make sure the cake board is little wider than the cake for easy working.
- Place the first layer of brownie base.
- Add half of the Chocolate Syrup / Sauce, gently brush the sides and not to overflow.
- Now add half of the Oreo Ice Cream and level it.
- Place the second layer of cake, top it with remaining chocolate sauce followed by remaining Oreo Ice Cream.
- Place it in the freezer for 6 hours or until set.
- Mean while you can make the Whipped Cream for Icing the cake.
- Take the frozen cake, remove the pan and parchment paper.
- Do frost the cake neatly if desired.
- Chill the frosted cake for a while and smooth it with hot water if necessary.
- Melt the chocolates / wafers in microwave or double boiler to smooth consistency with necessary heavy cream.
- Once it cools to room temperature (still in pouring consistency) pour it over Iced cake.
- Add the same in a piping bag with small round hole or using spoon do make dripping effect on the sides of the cake.
- Add the leftover Oreo whipped cream in a piping bag with Wilton tool tip 1 M.
- Pipe the cream on the top of the cake as you desire.
- Place sliced Oreo cookies over it.
- Serve chilled π
