In several of my posts I mentioned my younger one is a picky eater. So I always think possibilities to incorporate fruits and veggies in his everyday diet. He likes Savory Waffles hence I felt this Cranberry Savory Dosa Batter Waffles is a best method to add Cranberries and Avocado which he usually say Nay to eat. Also this waffles are made using Idli Dosa batter so it doesn’t need any chemical
agents like baking powder or soda. He finished this yummy and healthy waffles happily after returning from school with coconut chutney 🙂 Also as I promised in Cranberry Pickle Recipe I posted the waffles recipe now and will be coming with Soft Idli Dosa Batter video Recipe and Millets Idli dosa Batter Video Later! .
Variation 1 : Mixing sautéed berries and raw avocado in fermented dosa batter
Variation 2 : Mixing fresh ground berries with freshly ground dosa batter and fermented in Instant Pot later tempered the batter and made waffles.
Cranberry Savory Dosa Batter Waffles Preparation
- Soak Cranberries in water for 30 minutes and later wash 3-4 times as needed.
- Damp dry over a cloth and cut them in to halves.
- In a pan heat oil, add chopped Cranberries sauté with red chili powder (you can do without sautéing as well check instant pot version for more details).
- In 3-5 minutes it mashes and forms a thick paste as shown in the Video.
- Let it cool, meanwhile peel, cut and grate the avocado.
- In a bowl take 2 cups of fermented Idli dosa batter.
- In a pan add little oil temper mustard or cumin seeds.
- Add tempered cumin / mustard seeds and cranberry paste to the batter mix it well.
- Look at that gorgeous color of the batter.
- Now add grated Avocado and adjust salt, mix everything well.
- In preheated waffle maker add the batter as shown.
- Flip and cook until Green signal is ON / Ready in the waffle maker.
- Instead of adding oil in the waffle batter I used enough while sauteing Cranberries.
- If not do add 1-2 Tbsp oil in your waffle batter not to stick in the waffle maker.
- Serve with coconut chutney its a best combo.
How to Ferment Idli Dosa Batter in Instant Pot
I will come with another complete idli dosa batter with Instant Pot fermentation and steaming. For time being I am sharing some tips and step by pictures here. I used Pot in Pot (PIP) to ferment the batter, since I used a minimal idli dosa batter otherwise use IP inner pot directly to ferment the batter with glass lid.
- Add 1.5 cup water to the inner pot (Pic 1) and place the trivet (Pic 1).
- Place the prepared batter carefully on the trivet by closing the pot with stainless steel plate like shown in Pic 2.
- Set the Instant pot in normal Yogurt mode for 8-12 hours depends on the quantity of idli dosa batter.
- Cover the Instant pot inner pot with glass lid (Pic 4) and let the timer starts and wait for the hours you set to get the fermented batter.
Dosa Batter Waffles in Instant Pot
Using the previous technique I explained I fermented the cranberry savory dosa batter in Instant pot. Also when I shared in FB group few people asked why to sauté the cranberries? Since my kiddo is a picky eater I did so during initial days. Recently I tried this recipe without sautéing and added freshly ground cranberries in the waffle batter directly. Let me explain the step by step below pictures.
- Cleaned and rinsed fresh cranberries, ready to grind (Pic 1).
- Ground with 1/2 cup fresh non fermented idli dosa batter (Pic 2).
- Pour the ground mixer in to rest of idli dosa batter (Pic 3).
- Add salt, mix the batter well (Pic 4) and let in ferment for 8-12 hours or as needed and explained above.
- Once fermented (Pic 6) mix the batter gently from top to bottom (Pic 5).
- Do temper the rest of ingredients, add rest of sesame oil and do make waffles.
- Also this batter can be used to make Dosa , Idli or Paniyaram (Appe) as well.
Dosa Batter Waffles Ingredients
Ingredients
Fresh Cranberries – 1 Cup
Idli Dosa Batter – 2 Cups (will be coming with detailed video recipe later)
Cumin Seeds / Mustard seeds – 1/2 tsp
Sesame Oil – 2 Tbsp
Optional Curry Leaves Chopped – Few or Powder
Chopped Onion – Optional
Split Whole Red Chili – 1 OR
Red Chili Powder – 1/2 tsp (As Needed or Green Chilis/Capsicum)
Salt – As Needed

Variations
- One day I used Cranberry Pickle / Thokku in the Idli Dosa batter and it tasted yum.
- Chopped Ginger, Chopped Onion enhances taste of this waffles, since he is picky I make it plain.
- Instead of chopped curry leaves you can use Curry leaves or Moringa leaves powder in the batter.
- Also you can add Chana or Urad dal while tempering to enhance it up.
- As I mentioned in my previous Cranberry Almond Chutney and Cranberry Pickle Recipes, this Cranberries can be well replaced with Koronda (In Hindi) / Kalakai (In Tamil).
- If you are in a place where you don’t get Cranberries or Kalakai try with beetroot in this method and add grated mango instead of Avocado.
