Eggless Blueberry Savory Waffles, its gluten free, chemical agents free, Vegan and Sugar free. The crispy waffles are made from
Idli Dosa Batter. When you live in one of the top Blueberry producing states or place, then this happens π I already have Savory Cranberry Waffles and this is my second savory recipe in blog. Since kids show their interest on dosa waffles, now I started making it often instead of regular idli dosa, indeed this is healthy and filling.
Use of Instant Powders
Either I bring powdered Curry Leaves (Karuvepilai), Moringa Leaves (Murunga Keerai) and Hibiscus from my hometown or I make it when I get more garden yields. Only in spring & summer we keep the plant out and rest of the year it stays indoor and there is nothing to expect. For the homemade powder do check the link HERE. You can use any one of it or just skip.
Blueberries
If you wonder, aren’t the blueberries sweet and how this savory waffles work? Trust me I used a mild sweet blueberries and after making waffles there is no trace of its sweetness. This recipe is approved by both of my Kids. I used 1 cup of berries for the below recipe but if you feel the berries are sweet do reduce the quantity to 3/4th cup or 1/2 cup.
Corn Meal
Corn meal is nothing but coarse corn, and not fine powdered corn flour or corn starch. This coarse texture helps the waffles to rise very well and keeps it crispy for a long time. One more tip is once you are done with making waffles do place it over a cooling rack to remain crisp until serving.
Idli Dosa Batter
Its naturally fermented with the mix of rice/millets and urad dal overnight and this fermented batter rises beautifully without any chemical agents. Everyday we use this batter in the form Idli (steamed cake), Dosa (Creepes), Paniyaram (Appe /savory balls) and this fusion waffles. I have several Idli dosa varieties, do check it HERE. Particularly I used this Millet Recipe batter today.
How to make it without Waffle Maker
I used a waffle maker in this recipe and when I posted the cranberry waffles in FB groups, people raised questions on the waffle maker. If you don’t have a waffle maker do use waffle mold available in stores. Place them over cookie pan/baking tray, grease the mold with oil and pour the batter in to it. Bake them in preheated oven at 400 F or 200 C for 8-10 minutes or until its done.
Recipe For Authentic Coconut Chutney
I don’t have a separate post for coconut chutney (sigh). Also I don’t follow exact measurements for some recipes and this recipe includes in that list as well. Add grated/shredded coconut (1/2 cup), roasted gram dal (Daliya 1.5 tbsp), green or red chili – 1 or 2, salt and few curry leaves in food processor and grind smooth with enough water. Temper mustard seeds and curry leaves in little oil and add it to the ground chutney.
Ingredients
Idli Dosa Batter – 2 Cups
Fresh or Frozen Blueberries – 3/4 to 1 Cup
Salt – As Needed
Red Chili Powder / Paprika – 1/8th tsp
Curry Leaves / Moringa Leaves – 1 (1/2 tsp Each)
Hibiscus Powder – 1/2 tsp
Corn Meal – 1/4 Cup
Tempered Mustard Seeds – 1/4 tsp
Sesame Oil – 1 Tbsp
Blueberry Savory Waffles Preparation
- In a mixing bowl take the idli dosa batter.
- Add the powders, tempered mustard seeds (Pic 1) and if you wish do add sauteed onion and capsicum (finely chopped).
- Mix the powders with batter well (Pic 2).
- Later add Red chili powder and Corn meal mix them well (Pic 3).
- Puree the berries and add it to the waffle batter (Pic 4).
- Don’t add water while pureeing and keep the batter thick always.
- Add optional salt and Sesame oil/Olive oil to the batter (Pic 5).
- Note the thick batter consistency in Picture 6 or in video.
- Do rest the batter for 20 minutes after adding all the ingredients.
- In preheated waffle maker pour the batter evenly like shown in the video and picture 7.
- Turn the waffle maker and bake until its done.
- Also once done I turn the waffle upside down and bake for 2 more minutes (Pic 8).
- If using waffle mold pour the batter evenly and bake as instructed previously.
- Its best to serve/have it hot.
- I served this waffles with coconut chutney (recipe included), blueberries, cucumber and coffee.
- What a best way to begin the day π
Notes
- These Waffles may not rise properly when poured in non-heated waffle maker/oven. So preheat accordingly.
- Its optional to add Curry leaves, Moringa leaves powder or Hibiscus powder, use any available at home or skip it.
- Use freshly ground and fluffy idli dosa batter otherwise trouble shoot it with little Eno salt or baking soda.
