Ragi Banana chocolate muffins is an yummy and healthy breakfast muffins loaded with millet flour (ragi/finger millet), wheat flour and banana. Also this is refined flour free, refined sugar free and butter free muffins. I used a mild quantity of walnut powder you can replace it with wheat flour for nuts free muffins and also for topping use chocolate chips instead of chopped walnuts.
Know about the Ingredients
Raw Cane Sugar
I used Raw Cane Sugar here in this recipe and in most of the my healthy bakes. I use it up in reduced quantity, which is accepted by my under 10 years old kiddos. But you can adjust with the mentioned quantity plus 1-2 tbsp. I powdered raw cane sugar with the homemade spice mix in food processor.
Ragi Flour/Finger Millet Flour
Ragi is called as Finger Millet in English, which has high protein and mineral content. Also this is home ground flour using whole grain millet. I am planning to post Ragi recipes as a series in Instagram soon for time being do check the Ragi recipes HERE.
Whole Grain Wheat Flour
I mostly prefer to use whole grain wheat flour for baking and cooking. If you are a beginner do mix half of regular wheat flour with all purpose flour for this recipe, the difference between regular wheat flour and whole grain flour is the whole grain has bran , germ and endosperm which has coarse texture and the other one is fine powdered flour with the lack of all whole grain parts. Today I used the same whole grain wheat flour but sieved to remove the coarse bran for a change and this is exactly similar to regular wheat flour/atta. Few followers requested to give a recipe with atta/wheat flour so this change is upon request.
Replacement For Egg
Rarely use eggs in my bakes and up on necessity. Today I used one egg in this recipe. The same recipe I tried without egg and used 2 tbsp thick curd as a replacement which came out good as well. Homemade Spice Mix
Homemade spice mix is a fresh and flavorful powder made using ginger, cinnamon, pepper, cloves and cardamom. This is a good substitute for artificial/alcoholic essence. So this is a strongly recommended recipe for kids to have it for breakfast or snack. For the spice mix you need
Cardamom – 3 Numbers
Cinnamon – 3 Inch
Fresh Grated Ginger – 1.25 Tbsp (replace with 1tsp ginger powder)
Cloves – 3 Numbers
Whole Pepper – 12 Numbers
Melted Chocolate
Ragi and Chocolate are made for each other so here I used melted chocolate , dark cocoa powder and chocolate chips as topping and so considering this as triple choc flavor. Those melted chocolate was leftover from Choco bar Ice cream and Strawberry Chocolate Mousse Recipes. You can easily replace cocoa and melted chocolate with chocolate chips, fruit jam/preserve or thick curd/greek yogurt.
Walnut
My kids are not fond of walnuts like other nuts, So I mix it up in most routine muffin bakes. I used a coarse powdered walnut in this recipe. For nuts free option do replace it with wheat flour.
Banana
Use well ripen bananas for this recipe. I sometimes use frozen bananas too.
Ragi Banana Chocolate Muffins Ingredients
Ragi Flour – 1/2 Cup
Wheat Flour – 1/2 Cup
Walnut Powder – 1/4 Cup
Milk or Buttermilk – 2 Tbsp
Mashed Banana – 3/4 Cup
Optional Melted Chocolate – 2 Tbsp
Sugar – 1/3 – 1/2 Cup
Dark Cocoa Powder – 3 Tbsp
Oil – 1/4 Cup
Egg – 1 Number
Baking Powder – 1 tsp
Baking Soda – 1/2 tsp
Salt – ⅛ tsp
Ragi Banana Chocolate Muffins Preparation
- Dry roast the ingredients mentioned earlier for the homemade spice mix, let it cool completely.
- Meanwhile get ready with other ingredients.
- Powder the spice mix with raw sugar to fine powder (Pic 1).
- To the same powder add walnut (Pic 2) and grind coarse (not to fine).
- In a mixing bowl add this spice mix walnut powder (Pic 3), ragi flour (Pic 4), wheat flour, cocoa powder (Pic 5), baking powder, baking soda and salt (Pic 6).
- Mix all together and the mixture looks like shown in Pic 7.
- In another bowl prepare the wet ingredients.
- Take well ripen banana and mash it in whisk, little chunks are fine in it.
- Add flavorless oil (Pic 8) and egg or curd to the mashed banana.
- Give gentle stir after each addition.
- Now add melted chocolate (Pic 9), milk or buttermilk, in the video I cleaned the spice mix powdered jar using this liquid and added to the muffin batter.
- Once the wet ingredients are combined well(Pic 10), do pour this mixture over dry ingredients mixture (Pic 11).
- Mix well with no traces of dry flour, I used hand whisk as shown in video and pictures but any electric mixer speeds up the process.
- Check the muffin batter consistency (Pic 12). Sometimes just 1 tbsp milk or buttermilk may be sufficient and you may need more depending on the flour texture.
- Once batter is ready, do equally drop in each hole of oil greased muffin pan.
- Also top the muffins with chopped nuts or mini chocolate chip, refer picture below.
- In preheated oven bake at 375 F / 190 C for 12-15 minutes, refer picture below.
- Once done, cool on a wire rack and remove gently from the pan.
- Do serve or store in air tight container for later use.
