Its been a couple of years plan to post this Instant Millet Idli Ragi Rava Idli recipe in blog. Yup, I took unprofessional video clips (with one hand) a few years back (do check the video at 3:44 Minutes) with gothumai samba / coarse wheat and ragi millet flour. I don’t know why I took these many days, Yay! Finally made it today. Its my sons favorite and he very often asks me amma
(mom) can you make my favorite Ragi Idli? Since it’s his favorite I make it often, but for almost 6 months I was out of Ragi flour at home during peak pandemic and he was so disappointed that we ran out of ragi flour. Recently I found it in a nearby Indian store so after returning home I showed him what I got specially for him. He was so surprised and the same evening itself, I made this Instant Ragi Rava Idli for dinner.
Also I got cracked wheat in that purchase so I was able to record a decent video of making Instant Millet Idli with both Ragi Flour and cracked wheat as main ingredients. I shared both new and old video clips in the same video recipe, which is posted at the bottom of this post.

Ragi Idli Accompaniments
It goes well with Peanut Chutney and Coconut Chutney. However we eat Ragi Kali / Mudde with Sambar and Peerkangaai Masiyal so this idli goes well with those as well. Other than that I can’t imagine a vegetarian dish right now for this healthy idli. Check chutney collections below
How can you modify this recipe?
My son is a very picky eater I didn’t add any tempering or veggies in it. He like this way of my making and if you like do modify as you like. You can use 100% ragi rava or any millet rava to make this recipe, so in that case you no need to add ragi flour or idli or wheat rava just millet rava 2 cups and rest of the ingredients are same also do adjust batter with yogurt for right consistency. Since we don’t get millet rawa in stores I used mix of either wheat rava or idli rava with fine ragi flour.
Also do feel free to add sautéed veggies or tempering in this recipe. I do have green chilis and other tempered Instant Wheat Rava version do check it HERE.
Finger Millet Ragi Flour
Ragi is called as Finger Millet in English, which has high protein and mineral content. Its well available in the form of whole grain or as fine flour in Indian stores or do use Bobs Red Mill Millet Flour to this recipe..I am planning to post several Ragi millet recipes as a series in Instagram soon and in blog as well, for time being do check my collection of Ragi recipes HERE.
Yogurt/Curd
I use homemade yogurt and if its store bought or Greek yogurt do dilute with water tot he consistency shown in the video tutorial for soaking and making idli batter.
Lemon Juice
If your curd or unflavored yogurt is sour do skip or reduce quantity of lemon juice in this recipe. However lemon juice when reacts with eno and soda makes the idli super fluffy.
Raising Agents
This no long soak, no grind and no fermentation instant idli recipe needs those two raising ingredients otherwise you cant expect such output in your idli. Even I made it without soda in the beginning years but later after adding soda it turns out perfect all the time. so don’t hesitate to add in this instant version.
INSTANT MILLET IDLI INGREDIENTS
Ragi Flour – 1 Cup
Wheat Sooji / Cracked Wheat Rava / Idli Rava (for gluten free option) – 1 Cup
Eno – 1 tsp
Baking Soda – 1/4 tsp
Salt – 1/2 tsp
Lemon Juice – 1 Tbsp
Yogurt 3/4 Cup plus water – 1/2 cup or Buttermilk – 1 and 1/4 Cup to soak
Thick Yogurt – 1/2 Cup (to make Idli Batter)
Cashews or Almonds – As Needed
Optional Tempering with Mustard Seeds, Curry Leaves , Chana and Urad Dal
Optional Sautéed Veggies

INSTANT MILLET IDLI PREPARATION
- To the idli plate/mold apply melted butter/ghee or oil.
- Also place slivered almonds if desired and keep it ready.
- In a wide mixing bowl add Cracked Wheat / Wheat Rava or Idli Rava (Pic 1).
- Add yogurt mixed with water or buttermilk to the rava (Pic 2) and soak for 30-40 minutes (Pic 3).
- Rava soaks up well and absorbs all the moisture from buttermilk (Pic 4).
- Later add ragi flour (Pic 5), rest of yogurt, eno salt, baking soda and salt (Pic 6).
- Finally squeeze lemon juice (Pic 7), mix everything quick, batter consistency should not to be so thick and should be little gooey as shown in Picture 8.
- When the batter is foamy do add it immediately to the greased idli plates (Pic 9).
- Don’t rest the batter after adding eno and baking soda.
- You can temper and add to the batter, also you can add sautéed vegetables to it.
- In well boiling water place the batter filled idli plates and steam for 10-12 minutes (Pic 10) or until its done.
- When toothpick inserted in the center comes out clean then its the indication for doneness.
- If the batter is too runny/gooey its sticks a little bit in the toothpick, also it takes long time to steam.
- Let the idlis cool a littel bit before removing from plates.
- Also you can add cloth over the idli plates and skip those oil/ghee greasing process.
- Using wooden/stainless steel spoon gently turn the idlis (Pic 11) and remove from the plates.
- Picture 12 is the inner view of Instant idli.
No Idli Plate Idlis Steamed in Instant Pot
- Add 1.25 cups of water to the Instant Pot inner pot.
- Boil the water by using saute mode high for 5-7 minutes.
- Once water is boiling, gently place the batter placed cups inside the inner pot.
- Close the lid by pressing the steam release button .
- Also make sure the button is pressed down (for steam mode) to steam them.
- Now set pressure cook mode high and in steam mode timer wont work so keep a manual timer for 12-15 minutes (according to the size of the cups you use).
- Check the doneness by inserting toothpick in the center of the idlis.
- If its comes out clean then its done otherwise do steam couple more minutes.
