Karasev Recipe is my first air fryer based recipe in the blog. This air fried karasev is absolutely delicious, crispy and came out perfect like the deep fried ones. I have made so many batches and planning to do one more batch before this Diwali 2021…This gluten free and vegan snack can be eaten as it is or added to mixture/namkeen and make it a great evening snack for your family. I am going to post it either before Diwali or after that. Several unique air fryer recipes with video are in the draft and wanted to pull at least one great recipe for this Deepavalli. What is Karasev?
Karasev is basically a crispy snack made using gluten free flours ie chickpea / Gram flour and rice flour combo. This karasev is flavored with peppercorns, garlic etc. The one flavored with pepper is called Milagu ( In Tamil) Karasev.
Air Fryer Vs Deep Fried
There is a small change in the recipe between the air fryer and deep fried version. So stick with this recipe to get perfect crispy air fryer kara sev by watching the attached video tutorial at the end of this post. Do check the deep fried version HERE.
Karasev Recipe Star Ingredients
- Besan / Gram Flour
- Rice Flour
- Baking Soda
- Oil & Water
Karasev Recipe Ingredients
Gram Flour/Besan – 1.25 Cup
Rice Flour – 1 Cup
Oil – 3 Tbsp Plus 1/2 Tbsp for brushing
Peppercorns – 2tsp (Replace with Pepper Powder)
Baking Soda – 1/16tsp
Salt – As Needed (Used mix of pink and regular salt)
Water – As Needed
Optional Sesame Seeds
How to Prepare Karasev Dough
- Sieve gram flour before start making karasev.
- In a mixing bowl add sifted gram flour and rice flour.
- Add a portion of rice flour and peppercorns to mixie/food processor and grind pepper to coarse.
- But for kids sake I always grind it to slight fine powder, also you can replace it with store bought pepper powder.
- Add ground pepper with rice flour in to the mixing bowl (Pic 1).
- Also add baking soda (Pic 2) and salt to the dry flour mixture.
- Now heat oil and pour over the dry flour mixture.
- Once you add oil to the flour mixture (Pic 3), it foams.
- Stir with ladle and after few seconds rub oil with flour using hand (Pic 4).
- Once done the mixture looks crumbly (Pic 5).
- Now add water (Pic 5) in batches and mix until it turn into a stiff dough (Pic 6).
- If its super moist adjust with gram flour and rice flour of right proportion.
- Too moist dough needs long time to air fry or gives soggy karasev.
- So make it the right consistency stiff dough like shown (Pic 6).
- Grease murukku press with oil for smooth handling.
- I have chosen a shape shown in Picture 7.
- Insert the karasev dough in to the press (Pic 8).
How to Air Fry Karasev
- Choose either Air Fry or Roast option in the Air fryer.
- Set time for 8 minutes and temperature to 350F.
- Air fryer preheats in less than 2 minutes, so be ready with the dough.
- Once it indicates to add food do pull the basket out.
- Immediately squeeze the dough like shown in Picture 10 & 11.
- Brush the top of karasev lightly with oil and insert the basket into air fryer.
- In the middle of air frying, when its 4 or 3 minutes left to finish, it asks to turn the food.
- Karasev breaks while turning, that’s ok , do turn gently and apply light oil again.
- Insert the basket and let it continue air fry for the rest of the minutes.
- Once done do check whether its crispy or not if not do fry 1 or 2 minutes more.
- For me it was perfect in 8 minutes of roasting.
- Yup I chose “Roast” option if you don’t have that option use “Air Fry” option.
